So many snow days, so much time on our hands! All my friends were bragging about their snow cream recipes that I decided to investigate a vegan version. There were LOTS of recipes with soy milk, coconut milk, or coconut cream, etc… That I just plowed into a trial run.
Scoop up 8 c. CLEAN snow
Mix w/ 1 tsp. vanilla
1 can coconut cream (high fat, I know, but it was in the cupboard. Use lite or almond milk – just experiment)
1/2 c. cup sugar (daughter’s choice – I leaned toward maple syrup
Stir, taste, adjust.
After a tasting the vanilla version; we added about 1/2 c. cocoa powder and a hair more sugar.
I have to say, all this occurred after I’d already made a snow margarita!
Pour all your usual liquids together, add 1-2 cups snow and stir. Cha-cha-cha! 😉
