Red Beans & Cabbage – Un-Stuffed

The ingredients for this were inspired by Susan Voison’s Collards Stuffed With Red Beans.

  • 1 1/2 c. cooked jasmine brown rice (or rice of your choice)

  • 2 c.  small red/black beans,

  • 1 onion, diced

  • 1 green pepper chopped

  • 2 ribs celery, chopped

  • 2 cloves garlic, chopped

  • 1  26 oz. box of diced tomatoes

  • 1 t. poultry seasoning

  • 1/2 t. red pepper flakes

  • 1 t. smoked paprika

  • 1 Tbs. Texas Pete

  • 1/4 t. black pepper

  • salt to taste

  • 1/4 head chopped cabbage

Saute’ all vegetables in less than a teaspoon of oil plus a little of the tomato juice. Add beans, rice, tomatoes and seasonings and simmer about 15 minutes more.  Dish it up. Sprinkle on some nutritional yeast and some chia seeds if you like. Top with vegan sour cream, spicy guacamole, and some mixed greens.  Eat with some tortilla chips and maybe a bit more hot sauce. De-lish!
