Cold. Cold. Cold and windy today. I wanted something different, yet warming for brunch. Thought I’d make a tofu scramble, but realized I had a lot of stuff that needed to be used up:
leftover Soy Curls, onion, and dried mushroom combo (1-1.5 c.)
1-1.5 c. leftover brown Jasmine rice cooked in vegetable broth
baby Portobello mushrooms (6 sliced)
a nub of onion (.25 c)
chopped tomato, onion, cilantro mix (2/3 c.)
chopped kale (.5 c packed maybe)
1 baby yellow bell pepper
1 clove garlic chopped
Threw all veggies (except kale) into a pan to water saute. Dashed in about 1 Tbs.Braggs Aminos or Tamari.
Tossed in the rice and about 2 Tbs. lemon juice.
Dash or two Chicken Flavored Seasoning
Drizzled on 1 tsp. smokey flavored sesame oil.
Dashed in .25 tsp. cayenne powder & 2 tsp. turmeric powder.
Added the kale, mixed in & turned off the heat.
Sprinkle 1.5 Tbs. Chia seeds on and mix in.
Warm and satisfying!
