Healthier Hash Browns



I started the day wanting some hashbrowns (I’d just gotten blood drawn for my annual cholesterol test and really wanted a sinful breakfast).  In an effort to make it healthier, I used a quick spray of Pam in my new nonstick  green frying pan, then I –

sautéed 1/4 of a med. onion

1/4 of a green pepper

half a jalapeño

1 stalk celery

1/4 c. shredded potatoes

1/4 cup brown basmati rice (leftover)

1/4 c. reconstituted Soysage TVP

Topped it with a little ketchup (it should have been no salt/no sugar, but wasn’t) and some Texas Pete.  Very filling and satisfying for a late breakfast.
