Veggie Fajita Delight

I had a well deserved and fab Mexican dinner after work last night!  Of course, after the “made at your table guacamole” and a “skinny” version of that classic drink Jimmy Buffet wrote a song about, I couldn’t eat much more.  I’d ordered Vegetarian Fajitas that come with a side of beans, lettuce and more guacamole.  Those I ate and brought home the lion’s share of the sautéed peppers, onions, mushrooms, squash, a bit of guac & the flour tortillas.

Saturday mornings I rarely eat before almost lunchtime, so out came the leftovers and into the pan to warm up they went.


Add some spinach leaves, cilantro, a bit of jalapeño & a small precooked potato.  Top with your favorite vegan cheese; re-warm the tortillas in the pan on the side…


 Spread tortilla with leftover guacamole, add veggie mix, roll up & eat!  As always, I started in before it occurred to me to share this with you!! 


  Easily made from scratch with your own squash, mushrooms, peppers and onions!  The possibilities are endless!
