Versatile Kale

Nothing like steamed kale with jalapenos for dinner after a hearty lunch.

Add the leftover ginger-lime seitan from the birthday dinner, a few sweet/hot banana peppers and for the 2nd bowl I thought hmmm… add some mandarin oranges (with vitamin C to help my body absorb the nutrients form the kale like iron & calcium) and sprinkle flax seeds on top.  Dash on the hot vinegar – A cacophony of flavors in my mouth!

    EEK! My admiration for your ability to eat this sort of stuff knows no bounds. If I lived near you I would ask if I could come over and try just one mouthful of everything you make. Possibly i would start to get used to it.
