Looong week teaching. Got home at 7:45. Was really happy to son # 2 here and ready to cook. Sorry I didn’t take a picture when it was first made–It looked and tasted way better than this pic of the puny leftovers!
1 batch quinoa (recipe on bag) *Throw in some 1 Tbs. lime juice & 1 tsp. chili powder
1 ear fresh corn cut from cob
1 clove garlic
1 jalapeno seeded and chopped
8 baby carrots sliced
1 cup edamame cooked
4 Morningstar Grillers Chicken patties thawed and sliced up
Saute up the veggies in a pan w/ a bit of olive oil
Add fake chicken
Toss in quinoa at the end – throw some Craisens on top and another squirt of lime – Delish!
