Ratatouille Recipe and More

Strawberry Vinaigrette


Throw in blender 5-8 strawberries (cut off cap)

1-2 Tb. pomegranate balsamic vinegar

1 tb. water

1 Tb. ground flaxseed meal



Curried & Spiced Potatoes & Soybeans


Microwave 2 large potatoes till not quite done

Cube & saute potatoes with 1 clove garlic chopped / in 1-2 Tb. canola oil

add 1/2 seeded, chopped jalapeno pepper

I may have added 1/3 large onion

Add 1/2 bulb fennel I’d braised about 10 min.

add 2 packs curry spiced soybeans (you can also get spiced chickpeas $0.99 each at Trader Joes)

*Sub a can of chickpeas and more spice if you can’t get these

Throw in 1 cup frozen peas

1 tsp or more curry powder (or gram marsala)

1/2 tsp turmeric

We wanted to add 1 coconut milk but didn’t have it so subbed a cup or more No-Chicken Broth mixed with 1 Tb. cornstarch

Cook till thickened (about 10 more min.)

Serve with 1-2 Tb chopped cashew nuts




Saute in 1-2 Tb. oil

1 eggplant cut in fourths & sliced in 1/3 ” pieces

1 green pepper

1/2 seeded jalapeno pepper

1/2 large onion

1 clove garlic minced

Add 2 tomatoes chopped

1 1/2 bulbs braised/steamed fennel (10-15 min)

Add 3-4 Tofurky Italian sausages


Serve on couscous and sprinkle with vegan parmesan cheese
