Penance – Roasted Vegs

Seriously, does it get much better than this?  What a penance for eating a bit too much last night!  If this is punishment, put me on the naughty list! 

This is all that’s left of a bunch of asparagus, an onion, 2 large stalks of celery, a green pepper, 3 cloves of garlic, 3 small-med. size potatoes, 1 small eggplant, 10 or so baby carrots & a box of baby Portobello mushrooms–chopped and sprinkled with some smoked paprika, oregano, a bit of peppered vinegar and some lime juice.  Baked at 400 degrees for 30 minutes–tossed every 15 min.

One dinner for me with a bowl left for lunch tomorrow!

It’s amazing the huge amount of vegetables you can clean, cut up, put into a pan, roast the heck out of them for 30 little minutes (at about 425), and they shrink up into almost nothing but concentrated goodness!

 Can you believe this…

 

was 1 eggplant, 1 bell pepper, 2 large cloves garlic, 1 medium onion, about 15 baby carrots, 3 large leaves kale, 1 jalapeño, 1 box baby portabella  mushrooms & 4 small potatoes (sprinkled with 1 Tbs. of vinegar, 1 Tbs. Braggs, a tsp. of olive oil and a healthy dose of Mrs. Dash)???  When that pan went into the oven, the vegetables were overflowing the top.  Considering I just ate the better part of a container of chipotle hummus, I’ll probably only have 1 bowl tonight.  More for you – Enjoy!

Tomorrow’s lunch will include a soy sausage.
