Queso Scramble on Polenta

Need your sinuses cleared out or a little jump start to get warm?  A hearty start to any morning.  Start your hot water and add your polenta (yellow grits) per the bag’s directions.  I used 1 cup water and 1/3 cup polenta.  Drain, mash, dry fry with the seasonings of your choice (garlic, onion powder, hot paprika and chili powder, cumin, black pepper and turmeric).  If I hadn’t been in such a hurry, I’d have sautéed some peppers and onions too.

When done, plate some polenta, top with tofu scramble…

…. then top with vegan queso from a jar or homemade.

Enjoy!

Breakfast of Champions

There were a couple of end pieces of tofu left over from various holiday recipes, so I started to make myself an indulgence for breakfast.

A mock fried egg sandwich.  An indulgence since I try not to use oil anymore and an egg sandwich needs a bit of Earth Balance to sizzle and pop in, plus the “buttery” flavor doesn’t hurt!

Slice the tofu to desired thickness (I like mine on the thinner side)

Blot out excess water

Melt a heaping teaspoon of Earth Balance (or canola oil) till sizzling on just under med-hi

Slide tofu slices in carefully

Sprinkle with turmeric, onion & garlic powder, smoked paprika, pepper and a tinee bit of sea salt (whatever you feel like-turmeric gives it a lovely yellow color and mellow flavor)

Fry till it browns on both sides.

Plop a slab on your favorite bread (sourdough here) with Veganaise on both sides.  You could add vegan cheese or sausage, but I like mine straight (maybe a dash of hot sauce if you’re in the mood).  That and my strawberry-banana smoothie, perfect!

I started thinking, since I’m frying….I may as well do the rest.  Samich anyone?

Saturday Morning Big Bowl – My Way

At almost noon on a Saturday morning, after a grueling week where the weather has turned cold and I’d had 3 cups of coffee…  I was craving something warm, starchy (no potatoes in the house), salty (not good, I KNOW), spicy and rich tasting… what an ETL/E2 girl to do?  I mean I had a hankering for a Rip’s Big Bowl kinda meal.

This is what I love to do — take what you have in the house and adapt!  So I found:

A large ½ c. or so of silken tofu from last week’s lasagna, rinsed & drained

About ½ cup whack off a new Gimme Lean sausage roll

1 clove garlic

½ c. sweet onion

1/3 of a jalapeno pepper, chopped, no seeds

1/3 c. polenta cooked in 1 c. water

I lightly sautéed (on med-hi) the onion, garlic, jalapeno & Gimme Lean in a nonstick pan

Tossed in and cooking the tofu, chopping & tossing the whole time, splashing in a tablespoon or so of water if it starts to stick.

I spiced it up with a few dashes of – cumin, Hungarian paprika, thyme, coriander, turmeric & pepper.

A rare treat, I allowed myself a pat of some Earth Balance margarine and for the salt (along with the Gimme Lean) a drizzle of Texas Pete.  If you have some vegan cheese, a slice of that would be perfect!

A nice warm belly & mouth satisfying way to do brunch. Enjoy!

Tofu & Potato Scramble Morning

Cold, windy, rainy today…I hate fall/winter….sorry to all you who love it.  I’m a summer kinda girl.  The shorter days also have me craving carbs and I’ve given in to a potato-a-day  habit lately. I’m trying to keep them small.

So I drank my mixed berry, soy, flax  smoothie around 9:30 and it just wasn’t hearty enough for me today.  By noon I decided to make tofu scramble with potato mixed in.  My son had his in a wrap.  I had mine with some green salsa and a wee bit of ketchup.

Sauted up a small onion

a green pepper

a tomato

Threw in a chopped drained box of firm tofu (would have been great if I’d frozen it first for some texture)

4 small nuked potatoes

Healthy doses of : garlic powder, chili powder, cumin, turmeric, oregano, Hungarian paprika, cilantro, and whatever else strikes your fancy.

*I admit, I love tofu fried in a bit of oil, more of an eggy flavor and feel.  But am trying to avoid oil where I can.  I used a spritz of olive oil spray in the pan.  Good Morning!  More coffee please (haven’t let go of this habit yet).
