Queso Scramble on Polenta

Need your sinuses cleared out or a little jump start to get warm?  A hearty start to any morning.  Start your hot water and add your polenta (yellow grits) per the bag’s directions.  I used 1 cup water and 1/3 cup polenta.  Drain, mash, dry fry with the seasonings of your choice (garlic, onion powder, hot paprika and chili powder, cumin, black pepper and turmeric).  If I hadn’t been in such a hurry, I’d have sautéed some peppers and onions too.

When done, plate some polenta, top with tofu scramble…

…. then top with vegan queso from a jar or homemade.

Tofu & Potato Scramble Morning

Cold, windy, rainy today…I hate fall/winter….sorry to all you who love it.  I’m a summer kinda girl.  The shorter days also have me craving carbs and I’ve given in to a potato-a-day  habit lately. I’m trying to keep them small.

So I drank my mixed berry, soy, flax  smoothie around 9:30 and it just wasn’t hearty enough for me today.  By noon I decided to make tofu scramble with potato mixed in.  My son had his in a wrap.  I had mine with some green salsa and a wee bit of ketchup.

Sauted up a small onion

a green pepper

a tomato

Threw in a chopped drained box of firm tofu (would have been great if I’d frozen it first for some texture)

4 small nuked potatoes

Healthy doses of : garlic powder, chili powder, cumin, turmeric, oregano, Hungarian paprika, cilantro, and whatever else strikes your fancy.

*I admit, I love tofu fried in a bit of oil, more of an eggy flavor and feel.  But am trying to avoid oil where I can.  I used a spritz of olive oil spray in the pan.  Good Morning!  More coffee please (haven’t let go of this habit yet).
