Broccoli, Brown Rice Casserole

Church Christmas Luncheon for the Holidays tomorrow.  Guess what?  Now that they know I can cook, I get to make something for every event for the vegan, gluten-free crowd (I am not gluten-free, but I get to kill 2 birds, wait that doesn’t sound good)… OK, OK, I should be flattered.   It helps to have a vast supply of  delicious recipes from trusted sources available.   The lasagna was from Rip Esselstyn.  The broccoli casserole from Susan Voisin at the fatfreevegan.com.  Can’t wait to dig in tomorrow at lunch!
